We did 9 nights a few years ago - 4 up around Ptarmigan and 5 on the lakes. So I'd say take as many as you can get. Hiking out pretty much takes a day, and plus the logistics of leaving a vehicle...

Parks that remain closed are spread throughout the province, including remote parks in the north. Thompson-Cariboo region especially has lots of closed parks, for now.
