So Doug, how did the jerky turn out?
I'm house sitting for my boss right now. He left me a bag of elk jerky he just made in his smoker. He used thin sliced elk steaks and Cabelas "jerky juice" for flavoring, then smoked it until the meat was dry.
He wasn't a fan of the taste, but he brought it into work and everyone else liked it. I've got orders to finish the bag up for him, and that isn't going to be a problem.
If anyone else is looking to make jerky, I would stay away from liquid smoke. That crap is terrible, and tastes nothing like a real smoker. You would be much better off to put the grill on the lowest setting and put a hand full of wood chips in tin foil with a few holes poked in the top.
