Poking around in the closet of "stuff" and found a preserved steak I vacpacked several moons ago. I have played around with longer term food storage in the past (jerky, ground beef, various cheeses, dried fish, all veg and fruit) with good success.
Does anyone feel adventurous and want to try an 11 year 4 month 14 day old steak?
It was preserved in a salt/sugar/prague powder or surecure dry rub and air dried in the fridge while having the moisture pressed out in paper towel and changed daily. It then got frozen and dry brine reapplied before being vac sealed. It has been hiding in the basement ever since.
Any other ppl into dehydrating / preserving food and have interesting projects?
