Briefly,nitrogen-containing amino acids (22 in all) are the essence of protein.
Many of these amino acids can be manufactured in the body cells from nitrogen released from other proteins to combine with fat or sugar.
Eight cannot be produced by this process and they are referred to as essential amino acids;however,all amino acids are essential to good health.Foods containing these eight amino acids are considered complete proteins.
The best sources of their value ,are:soybeans,wheat germs,brewer's
yeast,nuts and seeds,and whole grains.Other fair sources are dried beans,peas,and rice.All dried legumes contain some protein.Split peas,lentils,and navy,lima,kidney and pinto beans should be used
along with other protein foods.
Soybeans, however,are an exception.
They are amazingly healthful as high in protein as meat.They are considered a complete protein,or one that contains the eight amino acids.Natural food store carry other soybean products which should be
included in a protein conscious diet.Soy grits for example,are broken
into small pieces.They are delicious in breads,nut loafes,and casseroles.
Another is Tofu,soybean curd,soy cheese,soy and or wheat macaroni.
