If you have a base camp and want to wander about the copuntry side and not have to cook supper when you return - try this.
Soak white beans overnight. IN the morning rinse beans then add whatever you fancy e.g. tomatoes, bacon, salt and pepper or other spices with water to cover. Bring to a boil over a fire or stove. Meanwhile dig a hole about 2 feet deep, place some large rocks in the bottom and build a roaring fire on top of the rocks. When the rocks a hot and fire has reduced to hot coals place pot of beans on top, cover with a bit of sacking (or) and fill in the hole with the dirt you dug out.
Enjoy your day hiking. For supper unearth your beans and enjoy.
Goes great with bannock.
For bean recipe almost any cook book will have one you will like - or ask your spouse.
